"NIO", in the local dialect of Zakynthos, where we come from, means new olive oil every year, while "ÉLIA" refers to the ancient, blessed tree that offers us its wonderful juice, olive oil. The "NIO oil" is an expression that has accompanied us since our childhood. As we watched our parents and grandparents prepare for the new olive oil season at the beginning of October, making wooden poles and ladders, and at the same time making sacks, sieves, nets, and oilcloths. At that time, we eagerly wanted to taste the "NIO" together with freshly baked bread, as it flowed from the separator in the olive mill. To feel that characteristic bitterness in the throat, which today we know is due to the high concentration of phenols.
